How to make onion Shio Koji.

Have you tried this super umami booster?? If not, you will be surprised how tasty it is once you try. It is really good especially for vegans who is looking for Umami addition to your everyday meal!

It is very easy to make. And as it’s fermented, it lasts well! Of course it’s 100% natural, and very good for your guts. Why don’t you try!??? 🙂

Rice Koji

Ingredients

  • 1 onion: cut into 4 or 8.
  • 100g rice Koji
  • 35g salt

Method

  • Place rice Koji and salt into a bowl and mix well.
  • Grate onion (or you can use food processor).
  • Mix 1 & 2 very well. Place it into a container, put the lid on and leave it for 1-2 weeks until strong onion flavour disappear and start tasting sweetness.


    You can use onion Shio Koji (Umami booster) for
  • Soup
  • Fried rice
  • Stir fry
  • Marinade
  • Making dressing/ dip
  • Omelets
  • Fried chicken
  • Making pate
    etc. Basically for any meal you can use it.

You can use this fantastic fermented condiment just as alternative of stock.
