Ingredients
- 1 onion: cut into 4 or 8.
- 100g rice Koji
- 35g salt
Method
- Place rice Koji and salt into a bowl and mix well.
- Grate onion (or you can use food processor).
- Mix 1 & 2 very well. Place it into a container, put the lid on and leave it for 1-2 weeks until strong onion flavour disappear and start tasting sweetness.
You can use onion Shio Koji (Umami booster) for - Soup
- Fried rice
- Stir fry
- Marinade
- Making dressing/ dip
- Omelets
- Fried chicken
- Making pate
etc. Basically for any meal you can use it.
You can use this fantastic fermented condiment just as alternative of stock.
